After a long time in the technology world and dealing with smart machines and programs I wanted to focus on doing something that would relate more to people. Like salt, coffee has a rich culinary history starting in the Middle East and slowly spreading through out the world. I wanted to be part of that culture and history.
I see coffee as a unifier, a binding force, people all around the world get together for a cup of coffee. The coffee shop is more of a social construct where people interact with each other rather than just a shop that sells beverages.
This was one of the reasons I got into this business, that and the fact that I really, really love coffee!!
Around five years back I got myself an espresso machine and started getting coffee beans from all over the country, mostly from small micro roasters. It was almost shocking how good an espresso shot I could get from my small home espresso machine. Especially when I compared them to the ones at that big coffee store that everyone goes to!! That was quite a revelation and it put me on the quest to produce fresh roasted coffee that really tasted good. I am still on the quest to produce the perfect cup of coffee and the perfect shot of espresso and this is the journey…
